Frente al Palacio de Cortés, en el Centro Histórico de Cuernavaca, hay un jardín con mesas de madera donde la comida dura más de lo que planeabas. De día, la luz entre los árboles; de noche, las velas. La mesa cambia con el día: desayuno, brunch dominical, comida y cena. Puedes venir por pan y café, reunir amigos para comer o hacer del viernes una buena cena. En pareja, con amigos, en familia, o solo. Para celebrar algo bueno o simplemente porque sí.
México y el Mediterráneo se encuentran en la mesa de HOUSE. Aceite de oliva, aceitunas kalamata y limón amarillo. Labneh con dukkah, muhammara y pan tatemado. Cilantro criollo, hoja de aguacate y chiles que tienen nombre: cascabel, guajillo, chilhuacle. El encuentro sucede en los platos: mantequilla de chipotle junto al mezze del desayuno; limón preservado, chile serrano y menta entre los linguini. Cocina mexicana y mediterránea, con la soltura de California.
In Daniela Salgado Romero’s kitchen, the ravioli are made from scratch, and the tomatoes for her sauce are roasted in the oven; the peppers are cooked over an open flame. The mole negro is made with chilies, chocolate, sesame seeds, and time. We knead the dough and make our own desserts. In the morning, honey in the comb from Tepoztlán accompanies rustic bread; in the evening, slow-cooked pork belly, Mexican wines, and another spoon to share the dessert make their appearance.

Sunday calls for a long table. Eggs Benedict, HOUSE Chilaquiles, or French brioche. A mimosa, coffee, and time to order something else. Brunch is served à la carte: everyone chooses what they’re craving. Gather the family, order something to share, and let the conversation last longer than the first cup of coffee.

Start with something to share: Mediterranean mezze with harissa-marinated ribeye, hummus, tzatziki, and Kalamata olives. Ceviches, tostadas, and grilled bread to share. Next, sea bass with risotto, homemade ravioli, or mole negro. A glass of Mexican wine rounds out the meal. You’re in Cuernavaca’s Historic Center; the afternoon can wait.

El jardín de noche, las velas, una mesa de madera. Empieza con un Rosa Mexicano o un Limoncello Spritz. Ravioles hechos en casa, con jitomates al horno y pimientos al fuego en la salsa. Pork belly: cuatro horas de cocción lenta y un último paso por la plancha. Mole negro preparado en nuestra cocina. Después, vino mexicano y un buñuelo de guayaba para compartir con alguien con quien vale la pena quedarse.
